Wonderful delicious fruity dressing for salads or stir fry

Ingredients

• 1 heaped cup chopped mango
• 2.5 tbsp red wine vinegar
• 2 tbsp water
• 1/3-1/2 cup olive oil
• 1 tsp red pepper flakes
• 1/2 tsp salt

Preparation

• Place mango, red wine vinegar water and salt in a blender or food processor.
• Process until pureed stopping once or twice to scrape down the sides.
• Add oil and process until smooth.
• Transfer to a bottle or jar, add red pepper flakes, whisk or shake.
• Enjoy!
