Ingredients

- 14 pieces of NZ mussels - cleaned and drained dry
- sea salt to taste
- cayenne pepper

(A):
- 1 clove of garlic - chopped fine
- 1 tabelpsoon of italian mixed herbs
- 3 tabelpsoons olive oil
- grated mozzarella cheese
- some chopped dills

Preparation

Step 1

Preheat oven to 200C. Mix ingredients A together in a bowl and leave aside.

Step 2

Lay the mussels in rows on a baking tray lined with aluminium foil.

Step 3

Sprinkle salt and cayenne pepper on the mussels.

Step 4

Scoop a heaped teaspoon of mixture A on each mussel.

Step 5

Cover each mussel with grated cheese and garnish with the chopped dills.

Step 6

Repeat this process on all the mussels.

Step 7

Baked in the oven for 8 minutes or till the cheese has soften .

Step 8

You can serve these as starters.
