Super tasty asparagus salad
We take advantage of the last asparagus of the season to concoct a delicious salad with ultra colorful and gourmet asparagus! :-) Ideal as a healthy vegetarian starter, to bring on a picnic or even to accompany your barbecue, this original salad recipe will be super easy to make. You'll love the freshness of tomatoes and the sweetness of feta.

Preparation
- Boil water in a saucepan and cook the egg for 10 minutes.
- Prepare the asparagus: cut or grate the hard part. Immerse in boiling salted water in a pan for 8 minutes.
- Peel and cut the egg. Crumble the feta and wash then cut the cherry tomatoes in half.
- Prepare the dressing:
Combine oil, vinegar, honey, mustard, crushed garlic, salt and pepper.
- Cut the asparagus into small pieces. If there are any hard parts left, remove them.
- Crack the walnuts and chop them into small and large pieces.
- In the salad bowl, put the pieces of asparagus, the cherry tomatoes, the egg, the feta, the walnuts.
- Pour the salad dressing on top and mix everything together. It's ready!
Observations
How to store this asparagus salad?
Protect your dish with cling film and place it in the fridge. You can keep the salad for 3 days in the refrigerator.
Can I replace the feta?
Yes you can add mozzarella balls for example!
Can i replace the egg?
Of course! You can also put crumbled cooked salmon, or cooked chicken or just remove it.
Is this recipe vegetarian?
