Chocolate mousse with whey protein

Preparation
Melt the dark chocolate (in a bain-marie or in the microwave) and pour into a bowl with the yoghurt.
Add whey.
Blend until smooth.
Place in the fridge for at least 1 hour to enjoy cold.
→This step is optional, but it will taste so much better!
And now it's ready! If you like, you can grate a little chocolate on top!

How do you achieve a light texture for this chocolate protein mousse?
Mix the ingredients well, as whey can form clumps and tends not to incorporate well. We made the recipe directly in the serving bowl for greater convenience (and less washing up ;-)) but you can make it using a chopper or an electric whisk/beater if you wish! On arrival, the texture should be smooth and perfectly homogeneous.
Can I use another type of yogurt?
You can use any plain yogurt. Greek yogurt adds creaminess to the mousse, while skyr adds firmness and protein. You can also use vegetable yogurt!
Which chocolate to use to make a chocolate mousse?
Here we've used dark pastry chocolate, but you can use the chocolate of your choice to vary the pleasure!
We've added grated chocolate shavings to the top of the mousse for an aesthetic, slightly crunchy touch - you can leave them out, of course.
How do I melt the chocolate without burning it?
Melt the chocolate in a bain-marie or in the microwave. If you choose the microwave option: melt the chocolate in 30-second intervals, stirring each time until you obtain a liquid texture. Let it cool slightly before stirring into the yoghurt to avoid instant hardening.
Which whey should I choose for this recipe?
Here we've used vanilla whey to bring a little sweetness to the recipe, but you can of course use plain or chocolate whey to enhance the chocolate taste of the recipe, or even hazelnut or peanut whey for extra indulgence.
Can I add an ingredient to make the mousse even airier?
You can add a stiffly beaten egg white if you want a more airy mousse.
How do I store this chocolate protein mousse?
You can store the mousse in an airtight container in the fridge for 24 to 48 hours. The longer you leave it in the fridge, the thicker it will be.
Can I freeze whey protein chocolate mousse?
You can store it in an airtight container in the freezer if you want to turn it into ice cream for the summer!
