1 puff pastry sheet
1½–2 cups blueberries
3 egg yolks
½ cup sugar
1 vanilla bean
1⅔ cups milk
⅓ cup cornstarch
1½ tbsp butter

Place the puff pastry in a tart tin and prick with a fork.
Bake for 15-20 minutes at 390°F/200°C (until golden brown).
Heat the milk and vanilla pod in a saucepan over medium heat (taking care not to bring the mixture to the boil).
In a bowl, combine the egg yolks, sugar and cornflour.
Turn off the heat of the "milk + vanilla pod" mixture.
Remove vanilla pod.
Pour half into "egg yolks + sugar + cornflour" mixture.

After mixing, return this mixture to the saucepan containing the other half of the "milk + vanilla pod" mixture.
Reheat over medium heat and stir until thickened.

Add the butter. Mix well.
Once the mixture has thickened, spread it over the baked puff pastry.
Add blueberries all over the top of the custard.

Let stand at room temperature until cool, then refrigerate for 20 minutes.
