Fruit tarts are usually topped with a lovely pastry cream. Today, Ptitchef is sharing its recipe, garnished with blueberries from our partner Toupargel.fr. A fresh and delicious way to end a meal!

Ingredients

1 puff pastry sheet
1⅓–1⅔ cups blueberries
3 egg yolks
½ cup sugar
1 vanilla bean
1⅔ cups milk
⅓ cup cornstarch
1½ tbsp butter

Place the puff pastry in a tart tin and prick with a fork.
Bake for 15-20 minutes at 390°F/200°C (until golden brown).
Heat the milk and vanilla pod in a saucepan over medium heat (taking care not to bring the mixture to the boil).
In a bowl, combine the egg yolks, sugar, and cornstarch.
Turn off the heat under the milk and vanilla pod mixture.
Remove the vanilla pod.
Pour half of the mixture into the egg yolk, sugar, and cornstarch mixture.

After mixing, return this mixture to the saucepan with the remaining milk and vanilla pod mixture.
Turn the heat back on to medium and stir until thickened.

Add the butter and stir.
Once the mixture has thickened, spread it over the baked puff pastry.
Add blueberries all over the top of the custard.

Let stand at room temperature until cool, then refrigerate for 20 minutes.
