- Cut the chicken in pieces. In a pot put the olive oil and heat at medium-high heat.
- Add the onion rings, garlic and peppers and sauté for 5 minutes. Add the chicken pieces and sauté for another 5 minutes.
- Pour the wine and let evaporate until it stays half. Add the water and all the herbs except the parsley, plus salt and pepper and simmer for ½ an hour.
- Add the lemon juice and parsley and continue to simmer for another half hour.
