Simple aloo sabzi (potato vegetable)

- 3 medium potatoes, peeled and cubed
- 2 medium tomatoes, chopped
- 1 tablespoon. Ghee
- 1 teaspoon. Cumin seeds
- 1-inch piece ginger, finely chopped
- ½ teaspoon. Coriander powder
- 1 teaspoon. Cumin powder
- Juice of ½ lemon
- Salt or sindalu salt to taste
- 2 tablespoons. chopped coriander leaves


Step 1

Heat ghee in a pot and add the cumin seeds. When they splutter, add the tomatoes, salt, coriander powder and cumin powder.

Step 2

Mix well and cook for 2-3 minutes. Add the potatoes along with 3-4 tablespoons. water.

Step 3

Cover and cook till potatoes are soft.

Step 4

Stir couple of times in between to prevent potatoes from sticking to bottom.

Step 5

Add coriander leaves and lemon juice. Mix and serve
