Zucchinis stuffed with tomatoes and sardines

One of our favorite dishes? Stuffed vegetables! Easy and tasty, it's the kind of recipe that appeals to the whole family. So as soon as the sun comes out, we hurry up and enjoy our seasonal zucchinis, topping them with a whole host of ingredients. Today we're bringing you our winning combo of vegetables + sardines. It's up to you ;-)

Wash the zucchinis and trim the ends. Cut them in half lengthways, then cook them in a pan of boiling water for 5 minutes until al dente. Scoop out the zucchini. Set aside.
In a frying pan, sauté the chopped garlic and onion with the oil from the tin of sardines. Add the hollowed-out zucchini pulp and cook for a few minutes.
Remove from the heat and add the diced tomatoes and chopped parsley. Add salt and pepper to taste.
Place your zucchinis on a baking tray lined with baking parchment and place your stuffing on top. On top, add your sardine pieces.
Bake for 15 minutes at 350°F/180°C and serve immediately! Enjoy ;-)
