Spicy stuffed mushrooms

2 - 14 oz containers of button mushrooms

4 tablespoons butter

1 onion, diced

1 stick pepperoni, small diced

2 cloves garlic, minced

1-2 sleeves of Townhouse crackers, crushed

1/2 cup Parmesan cheese

1 1/2 tablespoons parsley

1 cup chicken broth


  • Preheat oven to 325.
  • Wash mushrooms and remove stems. Finely chop stems. In skillet, melt butter, add onions & saute for 2-3 minutes, add the garlic cook for another minute. Then add the pepperoni and stems and cook until tender. Add crackers, cheese, parsley and mix thoroughly. Slowly add in enough chicken broth for a thick mixture. Spoon into mushrooms.
  • Drizzle the top of the mushrooms with a little olive oil. Bake at 325 for 20-25 minutes.



The stuffing made is cooked and spooned in the cavity of mushroom. Now one may reduce the oven time till first water released from mushroom i.e. about 2 to 3 minutes. It would be soft and more flavorful.
