Vanilla and chocolate layer cake

The perfect combo of 2 vanilla sponge cakes and 2 chocolate sponge cakes, reunited with a chocolate ganache and a topped with a glaze and chocolate sprinkles.

Ingredients

Number of serving: 8

120 gr sugar

150 gr flour

40 gr cornflour

5 gr baking powder

20 gr cocoa

1 tsp vanilla

10 cl cream

100 gr chocolate

10 ml milk

80 gr icing sugar

chocolate sprinkles

2 squared molds 20x20cm

Preparation

  • Step 1 - Vanilla and chocolate layer cake
    Prepare the sponge cakes :
    Beat the egg whites until firm and put aside.
    Mix the sugar with the egg yolks.
  • Step 2 - Vanilla and chocolate layer cake
    Add the flour, the cornflour, and the baking powder. Then, incorporate the egg whites gently with a spatula.
  • Step 3 - Vanilla and chocolate layer cake
    Divide the dough in 2. In the first bowl, incorporate the cocoa. In the second bowl, incorporate the vanilla.
  • Step 4 - Vanilla and chocolate layer cake
    Pour the two preparations into two buttered molds and bake during 15 minutes at 180°C (350°F). Let them cool down.
  • Step 5 - Vanilla and chocolate layer cake
    Prepare the chocolate ganache : bring the cream to boil and pout it on the chocolate, and mix until you have a homogeneous texture.
  • Step 6 - Vanilla and chocolate layer cake
    Put the two sponge cakes one on top of the other, align them and cut them in two to obtain 4 equal cakes.
  • Step 7 - Vanilla and chocolate layer cake
    Put the half vanilla sponge cake on the serving plate, then spread the chocolate ganache on top of it. Cover with the half chocolate sponge cake and spread chocolate ganache on top of it again.
  • Step 8 - Vanilla and chocolate layer cake
    Cover with the second half of the vanilla sponge cake. Spread chocolate ganache on it again. And finally, cover with the second half of chocolate sponge cake.
  • Step 9 - Vanilla and chocolate layer cake
    Prepare the glaze : Beat the milk with the incing sugar adding it gradually until the glaze has a toothpaste texture.
  • Step 10 - Vanilla and chocolate layer cake
    Spread the glaze on top of the cake, sprinkle with chocolate sprinkles and put the cake in the fridge for 1 hour.
  • Step 11 - Vanilla and chocolate layer cake
    Cut the edges of the cake and that's it !
