Fail-proof cheese puffs
A crunchy exterior hiding a soft and cheesy interior :-)

Melt the butter in the water, add a pinch of salt, and bring to a boil.
Immediately add the flour, and mix well while keeping it on the heat. Mix until the dough pulls away from the sides of the pot. Remove from heat.
Add the eggs one by one, mixing vigorously each time. The first egg is the most important, as it gives elasticity to the dough.
Finally, add the grated cheese to the mixture and stir.
Place small balls of dough on a baking tray lined with parchment paper, and bake for 25 minutes at 350°F (180°C). At the end of the baking time, turn off the oven and slightly open the door, waiting about ten minutes before taking the puffs out to prevent them from collapsing.
And there you have it, your cheese puffs are ready!
Observations
Cheese: Comté can be replaced with mozzarella, Emmental, Cantal, or any cheese of your choice.
Shape: You can make them larger or smaller according to your preference.
