One of the recipes we love to devour with our fingers, these cod fritters are clearly not to be missed ;-) Ideal as an aperitif with a yoghurt or chilli sauce, or as a main course on a plate with a salad ;-) With this recipe, we can assure you that your children will love fish!

  • Peel the garlic clove, remove the germ and chop finely. Peel and finely chop the onion. Soak up the water from the cod with kitchen paper, then flake the flesh. Wash and remove the parsley leaves, then chop as finely as possible.

    You can, of course, use a chopper to speed things up, but here we prefer to chop with a knife!
  • Place chopped ingredients (garlic, onion, parsley and cod) in a large bowl. Add flour, baking powder, egg, milk and food coloring (optional). Mix well.
  • Pour plenty of olive oil (or conventional frying oil) into a large sauté pan or high-sided frying pan and heat. When hot, dip small balls of dough into the oil. You can make them with two spoons, or roll them in your lightly greased hands.

    You'll need to fry the balls over medium heat to ensure they cook through.
  • When the fritters are golden-brown and cooked through, remove from the oil with a skimmer and place on absorbent paper to remove excess oil.
  • Ready to eat! Eat them while they're still warm so they retain their crunch!
