Bacon, goat cheese and walnut cake
When it comes to simple, quick and economical meal ideas, we of course call for a savoury loaf cake! And here at Petitchef we love to bake these with feta and olives, with ham and olives or even ham and cheese, it is clearly THE perfect meal accompanied by a salad, as an aperitif or even as a side dish. take it on a picnic! For a more autumnal version, we chose to incorporate walnuts, which go perfectly with the goat cheese and bacon :-) And for mini versions, don’t hesitate to try our savory muffin recipes!

- Loaf pan : 9x4 inches
Preparation
- Start by browning the bacon for a few minutes in a pan over medium heat until they are nicely browned.
- Break the nuts if necessary then crush them. Cut the goat cheese into small pieces.
- Cake batter:
Start by mixing the dry ingredients in a large salad bowl: flour, baking powder and pepper. - Then add the eggs and olive oil and mix well. Pour in the milk little by little and incorporate it well into the batter.
- Finally add the garnish: the crushed walnuts, the cheese cut into pieces and the grilled bacon. Mix everything well.
- Pour the batter into a greased loaf pan and bake in an oven preheated to 350°F (180°C) for 40 to 45 minutes (check doneness).
- And there you are, your cake is ready! Perfect for fall or to enjoy on a buffet!

We opted for a garnish composed of bacon, goat cheese and walnuts but you can also use seasonal vegetables to vary the flavors throughout the year!
