Bhaja Moong Dal (Roasted Moong Dal)
Preparation

Dry roast dal on low heat in a pan for 2-3 minutes or till it turns golden in colour and gives out a nutty aroma.

Add water and cook till dal is tender. Heat ghee in a thick bottomed pan and add bay leaves, cumin seeds and ginger.

Fry for about a minute.Add red chilli powder, coriander powder and turmeric powder.

Stir for half a minute and then add the cooked dal. Add salt and sugar and bring it to a boil.

Cook for 3-4 minutes till everything mixes well.

Serve with plain boiled rice.
