- Soak dried mushrooms until soft or soak overnight and cook it the next day.
- Slightly squeeze excess water from soft mushrooms. Remove stems with scissors and discard.
- Heat wok with 4 tablespoons of cooking oil, stir fry mushrooms until aromatic and add roast pork fry well.
- Lastly pour in 3 cups mushrooms liquid and bring to boil then add rock sugar. Lower heat and simmer 1 1/2 hour and add salt.
- When the mushrooms water beginning dries up a little add the balance 1/2 cup of mushrooms water into it.
- Garnish cooked mushrooms and roast pork with some lettuce on serving plate and serve.
