- Lightly boil the carrot just until is soft, but al dente. Reserve.
- In a skillet, fry in its fat the sausage. Add onion and fry until is transparent and soft.
- Fry a little the garlic. Add the tomato and turn off the heat.
- In a small bowl, slightly whisk the eggs, milk and flour.
- Put this mixture over the fried ingredients in the hot skillet.
- Brown one side, put the omelet in a plate and turn into the skillet to brown the other side.
- Serve immediately.
