Ingredients

Number of serving: 2
Cook gluten free cut macaroni of your choice.

3 clementines, peeled and diced

1 shallot, diced

fresh: parsley, cilantro, mint, basil minced

-1 medium organic Roma tomato, diced

1 can organic/low sodium garbanzo beans, drained

4 pieces of pimento cut small

2 teaspoons. lime juice

1 teaspoon. curry

pinch of ground cardamom

sea salt

cracked black pepper

splash of balsamic vinegar

tiny splash of white wine

Toss together gently and chill.

Preparation

  • Coat a nonstick skillet with nonstick spray and let it get hot.
  • Quarter the cooked potato and add to skillet use high heat so it browns quickly without mashing the potato.
  • Sprinkle with sea salt, smoked paprika, and crushed herbs.
