Chewy double chocolate persimmon cake

1 cup of persimmon pulp

1 cup flour

2/3 cup of sugar

1 tsp baking soda

1 tsp baking powder

2 tbsp vegetable oil + 1 tbsp butter

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

5 heaping tbsp chocolate powder

1 tsp instant coffee granules

2 big handful of dark chocolate chips


  • Preheat oven to 350F/180C.
  • Mix all dry ingredients in a mixing bowl, make a well, add persimmon pulp, vegetable oil and butter, mix until just combined.
  • Add chocolate chips, grease a loaf pan, pour cake batter, bake until a skewer stuck in the middle of the cake comes out clean.
