In your mixing bowl, whisk together the warm milk, active dry yeast, and 1 tablespoon of the sugar. Let sit for 5–10 minutes until frothy and blooming. Whisk in the remaining sugar, melted butter, and eggs.
Add 2 cups of flour and salt. Mix on low speed using a dough hook (or wooden spoon) until combined. Gradually add the remaining flour 1/2 cup at a time until a soft, slightly tacky dough forms. Knead for 5–7 minutes until smooth and elastic.
Transfer dough into a lightly oiled bowl, cover with a warm towel, and let rise in a draft-free spot for 60–90 minutes until doubled in size. Punch dough down and divide into 12 to 15 equal portions. Roll each into a tight, smooth ball and place side-by-side in a greased 9x13 baking dish. Cover and let rise again for 30 minutes.
Preheat oven to 375°F (190°C). Bake rolls for 12–15 minutes until top crusts are deep golden brown. Immediately upon pulling from the oven, mix melted butter and honey together and brush generously over the hot rolls before serving.

Observations
