Ingredients

• 1 cup Cucumber Skins
• 2 cups Spinach
• 1 Chopped Red Onion
• 1 tsp. Minced Garlic
• Salt and Pepper to taste
• 1 tbsp Butter

Preparation

• Peel cucumber using a julienne peeler. Chop onion. Melt butter in a sauce pan. Add garlic and onion and let saute for a minute. Add cucmber and spinach. Saute until cooked (spinach is mushy).
