Mix the eggs with the sugar. Then add the Pastis, vanilla extract, and milk, and mix well.
Incorporate the flour gradually. Cover the bowl and refrigerate for 30 minutes. Mix again before use.
Heat a pancake pan and, using a paper towel soaked in oil or melted butter, grease the pan. Pour half a ladle of batter.
Spread the batter in the pan and let the crepes brown on each side, turning them with a spatula when the edges lift.
And there you go, your Pastis crepes are ready!
