Put some flour in a plate, then dip one face of the escalope in it.
Put a slice of cheese and half a slice of ham on the non-floured side of the escalope.
Dip it in the beaten eggs, then in the breadcrumbs. For a crunchier result, dip it in the eggs and the breadcrumbs twice.
In a pan at medium heat, after heating some oil, cook 5 minutes on each side.
