In a large pot, place the pork pieces, the whole onion (or cut in half), and cover with water. Bring to a boil, skim off the foam that forms, and let simmer for 1 hour on low heat.
In another pot, add the lentils, diced carrots, half an onion cut into large pieces, and the bouquet garni. Season with salt and pepper, and cover with water. Bring to a boil and cook for 25 minutes over medium heat.
Once the meat has finished cooking, reserve a ladle of the cooking water and set aside. Drain the meat and onion.
Also drain the lentils and remove the bouquet garni. Place the drained meat and lentils in a large pot, add the reserved cooking water, and mix.
Cook for 25 minutes over medium/low heat.
And there you have it, your pork butt with lentils is ready!

Pork: You can use various cuts, such as the shank.
Herbs: You can optionally stud your onion with cloves.
