Russian cold soup “okroshka”

Russian cold soup is called “Okroshka”. It is made with vegetables and bologna sausage, and is perfect on hot summer days.

Ingredients

Number of serving: 4
4 medium cucumbers

3 medium potatoes (boiled)

5 eggs (hard boiled)

17 oz small radishes (500 g)

17 oz bologna sausage (500 g)

8 oz sour cream (200 g)

64 fl oz keffir (2 liters)

1 cup fizzy mineral water

1 bunch dill

1 bunch green onion

1.5 teaspoon salt

Preparation

  • Dice the cucumbers, eggs, sausage and potatoes. Put them in a large pot.
  • Peel and grate the radishes on a coarse grater. Send to the pot.
  • Shred the onion and dill. Send to the pot.
  • Add salt and mix the ingredients.
  • Add the sour cream and keffir. Mix all well.
  • Pour the mineral water and mix well again.
  • Put in the fridge for 30 min before serving.

    You can keep this cold soup in the fridge for two days. The next day it will be even better than just cooked.
