Ingredients

Number of serving: 4

1)SUMAC MARINATED CHICKEN SHISH KEBAB:

1 1/2 libra Bonesless Chicken Breast

3 teaspoons Sumac

juice of one large fresh Lemon

1 tsp dried oregano

3 tablespoons of Olive Oil

Salt and Freshly Ground Pepper to taste


2)Turkish Rice Pilaf w/Orzo:

3/4th cup of long grain rice

4 tablespoons Orzo Pasta

1 Cup Chicken Stock

2 tablespoons Butter

1/2 teaspoon salt or to taste

1/4 teaspoon Pepper

Preparation

  • 1)SUMAC MARINATED CHICKEN SHISH KEBAB:
    Cut up the chicken into 1 inch chunks. Place in a bowl. Add minced garlic. Add fresh squeezed lemon juice. Add Sumac. Add Olive Oil. Add Oregano. Add Salt and Pepper to tase. Mix and let the chicken marinate for 1-2 hours. Once marinated thread about 5-6 pieces of chicken cubes on to a metal skewers. Chicken does not take long to cook. Do not over cook. These kebabs only take 10 minutes. Serve with Turkish Pilaf w/Orzo.
  • 2)Turkish Rice Pilaf w/Orzo:
    Wash the rice and saok in warm water for 15 -20 minutes. Drain rice. Place Orzo pasta in a heavy bottom pot and stir continuously until the color turns light brown. Add Butter and Rice in the pot and stir for 5 minutes. Pour one cup of chicken stock, stir. Add salt and pepper. Turn the heat to low and cook until the rice absorbs all of the liquid. Turn off the heat and let the rice stand for 5 min. Use a fork to fluff up the rice. Add chopped parsley. fluff up the rice some more. Serve the Rice with Chicken Shish Kebab.
