- Peel and dice the sweet potatoes and red onion.
- Steam the sweet potatoes and red onion.
- Once your sweet potatoes are cooked (check doneness by inserting the tip of a knife; it should go in easily for tender sweet potatoes), place them along with the diced red onion in a gratin dish.
- In a mixing bowl, combine coconut milk, curry, salt, and pepper. Taste and adjust the seasonings, then pour this mixture into the gratin dish.
- Bake for 15 minutes at 390°F (200°C). And there you have it, your sweet potato and coconut gratin is ready!
