Sweet potato popovers

Ingredients

• 4 eggs
• 1 cup milk
• 1/2 cup canned sweet potato puree
• 3 tbsp butter
• 1 cup flour
• 1/2 cinammon
• 1/2 all-spice
• 1/2 tsp of salt

Preparation

• Preheat oven to 375. Generously grease a popover pan and place it in the oven while it is preheating.
• In a blender or mixer combine all the ingredients until smooth.
• Pour the batter evenly among the popover pan cups, and do not fill more than 2/3 the way full.
• Bake at 375 degrees for 50 minutes. Once 50 minutes have passed, make a small slit in top with a knife and then bake them for 10-12 minutes longe.
  
• This will help release the steam and continue cooking them inside since the puree is denser and needs more time to cook.
• Remove the popovers and serve hot.
