One of our favorite comfort foods? Without a doubt : lasagne ! But last time, a vegetarian was at our table. So to make sure he enjoyed it too, we decided to concoct a vegetarian lasagne! Our secret for a tasty, balanced dish? Replace the meat with soy protein. You too can try it! We'll explain everything below:

  • Vegetarian lasagne (you won't believe it!) - Preparation step 1Bolognese sauce:
    Chop the onion and garlic cloves.
    Peel the carrot and cut it into several pieces. Do the same with the celery stalk after washing it. Place the vegetable pieces in a blender and blend until you have small pieces. If you don't have a blender, cut the vegetables into very small pieces. This is important if you want your Bolognese to be smooth and creamy.
  • Vegetarian lasagne (you won't believe it!) - Preparation step 2In a frying pan, brown the onion with a drizzle of olive oil, then add the garlic and brown.
  • Vegetarian lasagne (you won't believe it!) - Preparation step 3Add soy protein, tomato paste, white wine, miso, vegetable stock cube and boiling water, then stir. Cook for a few minutes over medium heat, until the alcohol in the white wine has evaporated.
  • Vegetarian lasagne (you won't believe it!) - Preparation step 4Add the tomato sauce and tomato pulp, then cook over a low heat, covered, for 20 minutes.

    Start by preparing a roux. Melt the butter in a saucepan, add the flour and stir until smooth.
  • Vegetarian lasagne (you won't believe it!) - Preparation step 6Add the vegetable stock (cube + boiling water mixed together), milk, salt, pepper and nutmeg, and allow to thicken, stirring constantly. After a few minutes, the sauce will have a creamy texture.

    Place 2 sheets of lasagne at the bottom of the dish. Add the Bolognese sauce on top, then finish with a layer of béchamel sauce. Repeat until all ingredients are used up.
    Bake the lasagne for 40 minutes at 350°F/180°C... and it's ready!

What is soy protein?

Also known as "textured soy protein", it's made from soy flour. You'll find it in large and small pieces. Very rich in vegetable proteins, it's a perfect alternative for vegetarian meals. When purchased dehydrated, simply soak it in hot water for ten minutes before cooking. Its appearance is very similar to crumbled chicken.

Where can I buy soy protein?

You can find it in organic stores or in the organic section of your supermarket. It will certainly be available in packets, but also in bulk.

What is brown miso?

Brown miso is a Japanese food. It is a fermented paste with a relatively salty taste. It's made from soybeans, rice (or barley), salt, water and ferments. Very rich in protein, it's the perfect condiment for soups and sauces!

You can find brown miso in organic stores or in the "world cuisine" section of your supermarket.

How do I store my leftover vegetarian lasagne?

Place your vegetarian lasagne in an airtight tin and refrigerate for 2 days.

Can I make a vegan version of this vegetarian lasagne?

Of course! For the bolognese, check that the white wine is vegan.
For the béchamel sauce, you can replace the butter with vegetable margarine and the cow's milk with soy milk.
As for the lasagne sheets, they should be guaranteed "egg-free".

What should I serve with my vegetarian lasagne?

As this dish is quite rich, we love to accompany it with a green salad. Refreshing, guaranteed!
