Banana bread with rice flour

2 C. / 200 g Rice flour

3/4 C. / 50 g sugar

1 1/2 tsp Baking powder

1/4 tsp Baking soda

Pinch of salt

1 egg

1 1/2 Tbsp Vegetable oil

1/2 C. / 100 ml milk

1 C. ripe/bruised bananas, mashed


  • Preheat oven to 180 C/350 F. Grease loaf pan and set aside.
  • In a medium bowl sift the flours, baking powder, baking soda and salt. In a separate bowl add the oil, milk, egg, sugar and mashed bananas. Mix well until all ingredients are combined.
  • Then stir this into the flour mixture until blended.
  • Pour into the prepared loaf pan and bake for about 55 minutes to 1 hr or until a skewer comes out clean and the cake is just firm. When ready let it cool completely on a wire rack.
  • Tip:
    Serve with butter or cream cheese.
