Grate the zest of 1 lemon and juice 2 lemons. Preheat the oven to 350°F/180°C.
Whisk the eggs with the sugar. When the mixture is frothy, incorporate the flour and baking powder.
Melt the butter and incorporate it into the mixture. Then, add the lemon juice, zest, and poppy seeds, and mix well.
Pour the mixture into a greased and floured loaf pan and bake at 350°F/180°C for 45 minutes.
And there you have it, your lemon and poppy seed cake is ready! If you want to decorate your cake, you can add halved lemon slices on top!
Observations
Feel free to change the proportions if you want to make your cake sweeter (by adding sugar) or more acidic (by adding lemon juice and zest).
