The kind of fresh and quick recipe we all look for in summer :-) An appetizer made with prosciutto, cantaloupe, and tomato to change from traditional beef or fish tartares (salmon/tuna). A sweet and savory mix that your guests will love. Serve in small glasses or arrange on a flat plate using a ring mold.

- A 10cm serving ring
Preparation
Cut the prosciutto into small pieces. Do the same with the onion.
Peel the tomatoes and cut them into small dice.
Mix the prosciutto, onion, and tomato, and add the chopped chives. Add 1 tablespoon of olive oil and 1 tablespoon of vinegar. Mix well.
Form the tartare using a ring mold, or make a small mound on a plate.
Cut the cantaloupe into thin slices and arrange them nicely on the tartare.
And there you have it, your prosciutto and cantaloupe tartare is ready!
Observations
Cutting the cantaloupe: If you have a mandoline, it will be handy for making nice slices of cantaloupe.
