Preparation
- Put the minced meat in a bowl, add the finely sliced onion, as well as the sliced capers and pickles.
- Add the mustard, ketchup, salt and pepper and mix well.
- Form the tartare on the serving plate, with a circle, a bowl, or by hand.
- Form hollows on each tartare.
- Put an egg yolk in it.
- There you are, your steak tartars are ready! Feel free to add toppings on the plate so that everyone can accommodate it in their own way. Mix the meat well before eating, so that the egg yolk is incorporated.
Observations
Ground meat: The ground meat must be very fresh and must be chopped during the day. You can also use chopped with a knife, which you can ask your butcher.
