Boil raw peanuts in salted water till soft for 15-20 minutes (they will be soft yet firm). Drain the water and let the peanuts cool completely.
Also, in another pan, boil beetroot in water for 5-8 minutes. Drain the water and cool completely. When cooled, cut the beetroot in half, then again in half and then thinly slice them.
Prepare the dressing by mixing all the dressing ingredients. Keep aside.
In a salad bowl, add peanuts, carrots, cucumber, beetroot, mint leaves and black currants.
Pour the dressing, season with salt & pepper and toss well.
