Boiled peanut salad

Ingredients

• 1 1/2 cup Raw peanuts
• 1 cucumber (thinly sliced)
• 1-2 carrots (peeled and thinly sliced)
• 1 beetroot
• handful of mint leaves (chopped)
• 2 tablespoon dried black currants
• For dressing
• 2 tablespoon lemon juice
• juice of 1 orange
• 1 teaspoon honey
• 1 teaspoon roasted cumin seeds
• 2 cloves garlic (finely chopped)
• salt and pepper (to taste)
