  • Boil raw peanuts in salted water till soft for 15-20 minutes (they will be soft yet firm). Drain the water and let the peanuts cool completely.
  • Also, in another pan, boil beetroot in water for 5-8 minutes. Drain the water and cool completely. When cooled, cut the beetroot in half, then again in half and then thinly slice them.
  • Prepare the dressing by mixing all the dressing ingredients. Keep aside.
  • In a salad bowl, add peanuts, carrots, cucumber, beetroot, mint leaves and black currants.
  • Pour the dressing, season with salt & pepper and toss well.
