Vegetable tagliatelle salad with peanut sauce
The sun is starting to shine, and we've been looking forward to preparing some light, gourmet salads for our picnics and barbecues :-) We're kicking off summer with this colorful, crunchy salad featuring cucumber and carrot tagliatelle, topped with a creamy peanut sauce. Easy to prepare, it's ideal for a light lunch, a quick dinner or an original side dish. Perfect for lovers of healthy, gourmet and vegetarian cuisine ;-) Of course, you can vary the vegetables according to the season (zucchini, peppers, etc.).

- 1 peeler/vegetable peeler
Preparation
Combine olive oil, peanut purée, lime juice, salt and pepper in a bowl.
Peel the cucumber to remove the skin, then continue peeling to form vegetable strips/tagliatelle.
Do the same with the carrots.
*You can stick a fork into one end of the vegetable to make it easier to peel.Arrange all the vegetable strips/tagliatelle in the serving dish.
Pour the salad dressing into the dish and toss well to incorporate.
Add the crumbled feta cheese on top.
And that's it! Your salad is ready! Sprinkle with crushed peanuts for an extra crunch!

You can replace it with mozzarella balls, for example. Remember to adjust the amount of salt!
