Ingredients 4 1/3 cup adzuki /azuki beans 1/3 cup mung beans 1/3 cup raw peanuts ( you can use skinless if digesting the skin is a problem) 1/3 cup fresh coconut, grated 1/4-1/3 cup chopped cilantro 1/3 cup purple onion, chopped 1 cuke, diced 1/3-1/2 cup cherry tomato, halved Lemon Dressing: zest and juice from 1/2 lemon 1 tbsp olive oil (optional) 1/2 tsp ground roasted cumin(optional) 1.5 tsp granulated sugar (you can use honey but I prefer sugar in this salad) salt and black pepper as per taste View the directions
