These sausage-and-cheese pastries are best served warm, when the crispy puff pastry is golden and flaky and the filling is soft, rich and flavorful. Inside, pork sausage meets creamy cream cheese, seasoned with black pepper and aromatic herbs. Topped with sesame seeds and poppy seeds, they’re perfect as a tasty appetizer, for an aperitif or as finger food with friends. Easy to prepare in the air fryer, they come out fragrant, golden and impossible to resist.

Ingredients

1 roll rectangular puff pastry
4 thin pork sausages
⅓ cup + 1 tbsp cream cheese
1 tsp extra-virgin olive oil
Black pepper to taste
1 egg yolk
Sesame seeds to taste
Poppy seeds to taste

Place the cream cheese in a bowl. Add the extra virgin olive oil and pepper, then mix with a fork until you have a smooth, even cream.
Unroll the puff pastry and leave it on its parchment paper. Cut the pastry lengthwise into 4 strips.
Using a teaspoon, spread a layer of cream cheese in the center of each strip. Leave the edges of the puff pastry free to make it easier to seal.
Place a sausage in the center of each strip, on top of the cheese.
Wrap the puff pastry around the sausage to form a roll. Trim off the excess puff pastry at the ends and seal it tightly by applying light pressure with your fingers.
Beat the egg yolk. Turn the rolls over and brush the surface.
Sprinkle the surface with sesame seeds or poppy seeds.
Place in the refrigerator for 10 minutes, without covering the surface with anything that might come into contact with the seeds. After 10 minutes, cut each roll into pieces about 2–3 cm long using a sharp knife.
Place the mini rolls in the basket with the closure facing down. Leave a little space between each rustico to allow hot air to circulate properly.
Bake at 350 °F/180 °C for about 12–15 minutes, checking the progress after the first 10 minutes. Continue baking for a few more minutes if necessary, until the puff pastry is puffed, crisp, and golden brown. Let rest for 2–3 minutes, then serve hot or warm as an appetizer, finger food, or snack with drinks.
