Microwave flan: a quick and easy last-minute dessert
Did you forget to plan a dessert but your taste buds are tingling at the end of your meal? No worries, just grab some eggs, sweetened condensed milk, and regular milk, mix them together, and cook in the microwave! This recipe allows you to whip up an easy and super quick dessert at any time of the day. Don't forget the caramel topping!

- Microwave-safe dish (14x22 cm)
Preparation
Make the caramel: In a saucepan over medium heat, add the sugar and a little water, and let it cook until the caramel forms. Immediately pour it into the bottom of a microwave-safe dish.
In a large bowl, combine the eggs, sweetened condensed milk, and milk.
Pour the mixture into the dish over the caramel.
Microwave on high for 5 minutes. Open the microwave for 30 seconds, then microwave again for 3 minutes. Open for another 30 seconds and cook for an additional 3 minutes.
Check for doneness by inserting a toothpick; it should come out clean. You can cook it for 1 more minute if needed. Allow it to cool completely before unmolding.
And there you have it, your microwave flan is ready!
Observations
Can I use store-bought caramel for this recipe? Absolutely, it will make the dessert even quicker to prepare! Line the bottom of the dish with caramel before pouring in the mixture.

I tried two variations of this recipe, one with condensed milk, and one substituting that with heavy cream. This recipe works for both (you just need to add 1/3 cup sugar to the custard). What I'm most impressed with is the cooking method. It cooks evenly and thoroughly. I think I overdid the original version's time, but it was still delicious. This may not be a pretty flan, but I found myself fighting going back for immediate seconds!
