Separate the egg whites from the yolks. Beat egg whites until stiff peaks form.
Mix the yolks with the sugar until the mixture whitens.
Gently fold the stiffly beaten egg whites into the sugared yolks. Finally, add the sifted flour and mix until well incorporated.
Place on a baking tray covered with baking paper, then bake for 10 minutes at 350°F/180°C.
Once out of the oven, remove the cookie from the mould and place on a cloth. Roll up the cookie with the cloth, and leave to cool for around twenty minutes.
Carefully unroll the cookie and spread the spread over it.
Then roll it up again (without the cloth!) and cut off both ends.
And there you have it, your rolled cake is ready!
