The skyr adds an ultra-creamy, protein-rich texture, perfectly balanced by the acidity of the raspberries. The whole thing is subtly sweetened, just enough to indulge without excess. Easy to prepare and keep on hand in the freezer, these little treats are perfect for a refreshing break or a healthy snack ;)

Combine skyr and agave syrup. Add frozen raspberries and mix well.
Form 5 heaps on a greaseproof paper-lined plate (or tray).
Place wooden sticks in the center. Freeze for 2 hours.
Melt the chocolate with the coconut oil (in the microwave or water bath). Dip the ice creams in the melted chocolate and drain well over the bowl.
Place the chocolate-covered ice creams on parchment paper again before freezing for 1 hour.
