Cut the chicken into pieces. Add the crushed garlic clove and the peeled, crushed ginger.
Then, slice the lemongrass stalk and add it to the mixture. Add soy sauce, mix well, and refrigerate for 1 hour.
Put the rice noodles in a bowl and cover them with boiling water. In a pan, heat some oil, and sauté the chicken and its marinade.
Once the chicken is cooked, add the chopped cilantro, stir, and remove from heat. Drain the rice noodles.
And there you have it, your lemongrass and ginger chicken is ready!
Observations
Ginger: If you don't have fresh ginger, you can replace it with ground ginger (1 tsp). However, it will be more flavorful to use fresh.
