1 1/2 pounds fingerling/gourmet potatoes

4 tablespoons olive oil

8 garlic cloves, minced

1 tablespoon freshly chopped Italian parsley leaves

freshly ground black pepper


  • Preheat oven to 400 degrees F.
  • In a casserole, put the potatoes in a single layer.
  • Season with salt and pepper.
  • Sprinkle the garlic and drizzle with olive oil.
  • Roast for 20 minutes, discard and keep cooking for another 15 minutes more or until potatoes are tender.
  • Add parsley just before serving.
