Toasted coconut and cashew nut butter

A little happiness in the form of coconut butter.


100 gr coconut (grated or in flakes)
1 handful cashew nuts


frying pan
food processor
1 small jar


Step 1

Toast 50 g coconut with cashews in a skillet without adding fat for about 2 to 3 minutes at low temperature being careful not to let it burn.

Step 2

Let cool, then add another 50g coconut and grind everything in the food processor/blender until you get a creamy paste.


Grinding the nuts:
If you have a powerful blender a few minutes will be enough until you get a creamy butter.
If the blender isn’t as powerful, you should blend the nuts little by little in order to prevent the machine to overheat.
