    Peel a lemon, then cut it into quarters and collect the supremes using a knife.

    Put them in a bowl and add the ricotta, the chopped pistachios (keep some to sprinkle on top of your yule log), the chopped chives, a pinch of salt and pepper. Mix well until you get a smooth cream.

    Now take the plastic wrap and place it on a work surface. Then lay the first 4 slices of salmon on top, then, overlapping them slightly, place the other four slices (you must form a rectangle with the smoked salmon).

    Now spread the ricotta cream over the salmon, taking care to leave an empty edge.

    Roll up the salmon starting from the empty edge side, trying to tighten slightly as you go. Once the roll is ready, wrap it in plastic wrap and let it rest in the fridge for at least two hours.

This salmon roll can also be prepared with cream cheese.

What can I use instead of smoked salmon?
You can also make this savory yule log with smoked swordfish or smoked trout.

What can I use instead of pistachios?
In this salmon log, we used pistachios to give a crunchy touch to the dish. If you don't like them, you can skip them. If you want to replace them with other dried fruits, we recommend hazelnuts.

What can be used instead of chives?
Dill is another ingredient that goes well with salmon. Try using it for this roll if you don't like chives.
