Vegetable Sauté is a nice addition to any diner but for the Christmas diner it is a must have.

Ingredients

• 300 g. of bell pepper
• 300 g. of zucchini
• 300 g. of eggplants
• 300 g. of cherry tomatoes
• 100 g. of shallot or onion
• 100 g. of leek
• fresh thyme
• salt
• ground black pepper

Preparation

• Dice all vegetable. Heat oil in heavy large skillet over medium-high heat.
  
  Saute diced vegetables, add thyme, season well. Serve with roast turkey.
