Preparation
Zest 1/2 lemon and 1/2 lime. Squeeze the lemon and lime. Cut the avocado into small cubes. Cut the smoked salmon into strips.
Mix the avocado with lime juice, lemon juice, salt, and pepper.
Whip the cream with the mascarpone, lemon zest, and a pinch of salt.
Assembly: Place the avocado mixture at the bottom of your verrines. Add the strips of smoked salmon on top.
Transfer the lemon cream into a piping bag fitted with a star nozzle and pipe cream on top of the verrines.
Sprinkle with lime zest on top. It's ready!
Observations
You can add fresh mango if you wish.
If you want to replace smoked salmon with fresh salmon, marinate it in lemon juice a few hours before serving.
