Blackened Tilapia Sandwich with Cilantro Lime Mayonnaise and Baked Red Potato Chips

Preparation

  • 1) for mayonnaise:
    Sprinkle seasoning liberally (or lightly, based on your taste) on each tilapia filet. Place each piece of fish into hot pan sprayed with non stick spray. Cook fish until flaky, approximately 3-4 minutes on each side.
  • For mayonnaise, combine all ingredients in small bowl. Cover and chill.
  • 2) for potatoes:
    In a medium bowl, gently toss potatoes with olive oil and salt and pepper. Place potato slices on baking/cooling rack placed into a cookie sheet.
  • Bake in 425 degree oven for approximately 15-20 minutes or until golden brown and crisp.
