This whipped feta spread is the kind of appetizer that makes crackers disappear in no time. Feta, fromage blanc, lemon and za’atar come together in a light, fresh and flavorful cream. Topped with roasted apricots, crunchy pistachios and a drizzle of olive oil, it has the perfect balance of sweet and savory. In a blender, add the feta, fromage blanc, lemon juice, za'atar, olive oil, and pepper.
Blend until the mixture is smooth and has the texture of whipped cream.
Serve the whipped feta in a bowl, along with roasted apricots (see notes), a drizzle of olive oil, and a few crushed pistachios.

How do you roast the apricots?
You can cook them in an air fryer (just like we did) by following the steps in our recipe right here! If you prefer to use the oven, arrange the apricots cut-side up in a baking dish and roast them for 15 to 20 minutes at 370°F/190°C, until they are tender and lightly caramelized.
Can I substitute another spice for the za'atar?
Yes, you can use Herbes de Provence or thyme if you don't have za'atar, though this will slightly alter the final flavor.
How long can the whipped feta be stored?
Whipped feta keeps for up to 3 days in the refrigerator in an airtight container, but it is best enjoyed soon after making to appreciate its freshness.
