Cook time12 min
Pour the water into a saucepan. Add white sugar, brown sugar, salt and butter. Wait for the water to boil; the butter should melt completely. Stir if necessary.
Remove from heat and add flour all at once. Mix well to incorporate.
Return to the heat and stir with a wooden spoon until the dough pulls away from the edges.
Add the vanilla extract, then the eggs, one at a time, incorporating each one well into the dough before adding the next.
Transfer the still-warm dough to a piping bag fitted with a fluted piping tip.
Spray oil onto sheets of parchment paper cut to fit the air fryer basket.
Pipe straight, well-spaced lines of dough onto the parchment paper (the churros will puff up).
*You can refrigerate them so the dough sets and they hold their shape.
Spray the churros with oil again. Cook them for 12 minutes at 390°F/200°C in "Air Fry" mode.
* You can flip them halfway through cooking.
Cook a little longer if necessary, then roll the churros in a mixture of sugar and brown sugar.
For the ganache, heat the cream, add the chocolate in small pieces and stir until smooth.
It's ready! Enjoy it hot!
FAQ ❓
How to store churros?
Store them in an airtight container and keep them for up to 2 days at room temperature or 3 to 4 days in the fridge. You can also freeze them, but they will soften.
How do I reheat churros?
You can reheat them for a few minutes in the oven or air fryer. Remember to apply a little oil to them so that they become crisp again.
Which piping tip should I use to make churros?
You'll need a fluted piping tip, with the width depending on the size you want.
How do I get churros with evenly spaced ridges?
When you pipe your churros onto parchment paper, they will flatten underneath if you cook them straight away. This isn't a serious problem, but you can help them keep their shape by refrigerating them. The dough will firm up and they'll hold their shape.
How do I get the sugar to stick better to the churros?
Spray them with a little oil at the end of cooking and roll them in sugar immediately.
