No electric mixer required: the batter comes together by hand and is gently flavored with vanilla, cinnamon and nutmeg. The little extra touch? A spoonful of honey spread over the cake while it’s still warm, giving it a glossy finish and even more moisture. Simple, tender and perfect with tea or coffee, this homemade honey cake is one to keep on hand for snack time.

Preheat the oven to 320°F/160°C. In a mixing bowl, beat the eggs, sugar, oil, vanilla, and honey until the mixture is smooth.
Gradually add the milk, stirring to incorporate it thoroughly.
In the same mixing bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Gently mix until you have a smooth batter.
Pour the batter into the greased pan and bake for 40 to 45 minutes. Check to see if it's done by inserting a toothpick.
As soon as the cake comes out of the oven, spread a heaping tablespoon of honey over the still-warm surface.
Let it rest in the pan for 20 to 30 minutes. Remove it from the pan and let it cool on a wire rack before slicing. Enjoy!
