Place the cream, mascarpone, bowl and beaters in the freezer for 15 minutes.
Beat with powdered sugar and vanilla extract until stiff.
Soak the ladyfingers in the milk.
For a soft texture, soak only halfway.
For a melt-in-the-mouth texture: soak the whole ladyfingers.
Place ladyfingers on cling film: make 3 rows of 10 ladyfingers. The cling film should protrude on all sides.
With ladyfingers: place sugar on top. You can use other cookies if you want :-)
Cover the ladyfingers with vanilla cream. Here we've only covered the central ladyfingers, but it's best to cover them all ;-).
Place the fruit (washed) on top of each ladyfinger. Here we put 1 raspberry, 3 blueberries and another raspberry per ladyfinger.
Cover with cream and repeat with a row of blueberries. Cover with cream.
Close the log to form the chalet: fold the side ladyfingers towards the center. Gently press the sides together to form an attractive triangle. Wrap in cling film and place on a serving dish in the fridge for at least 6 hours.
After this time, carefully remove the cling film.
Decorating is easy: sprinkle with sifted powdered sugar, add blueberries to the top of the "chalet", and you're done!
It's very easy to cut the slices, just cut between each ladyfinger!
FAQ ❓
How do you achieve the perfect texture for a red fruit log without a mould?
For a soft texture, soak the ladyfingers halfway in the milk, while for a melt-in-the-mouth texture, soak them all the way through. This step is crucial to achieving the desired consistency.
Why is it important to chill the cream, mascarpone and utensils before whipping?
Chilling the cream, mascarpone, bowl and whisks in the freezer for at least 15 minutes will help the cream to rise properly and ensure that the log holds together well afterwards.
How to shape the cabin-shaped log without using a mold?
Arrange the soaked ladyfingers on cling film in three rows, cover with cream and fruit, then gently fold the side ladyfingers towards the center to form a triangle. Wrap in cling film and refrigerate.
Which red fruits are recommended for this log, and how should they be arranged?
We used fresh raspberries and blueberries. You can also use a mix of red fruits, fresh or frozen, depending on your tastes. If frozen, defrost and dry them first!
How do I cut the log into neat, attractive slices?
To cut cleanly, we recommend slicing between each ladyfinger, which facilitates cutting and preserves the shape of each slice. You can cut the slices directly with the cake spatula!
